Remember these?? What dreams are made of...Swedish Cream Wafers. The Big winner at The Black Goose Designs Cookie Exchange brought to us by Lisa Dodge. (They are the big LOVE cookie front and center)

I finally attempted to make them for Jen's Birthday. And they turned out wonderful...just not as fancy as hers looked. My Mom tried them and she said that they were better then Smart Cookies, and that is a big deal people, Smart Cookies are her favorite!
Here is the recipe... try them you will like them!
Swedish Cream Wafers
1 cup soft butter ( I use unsalted)
1/3 cup whipping cream
2 cups flour
Granulated sugar
Creamy Filling
Mix thoroughly butter, cream and flour. Cover and chill.
Heat oven to 375*. Dough will be stiff and a bit crumbly. Knead to soften. Roll about 1/3 of dough at a time 1/8 inch thick on floured cloth covered board. (I roll mine between two sheets of parchment paper instead). Cut into 1 1/2 inch rounds.
Transfer rounds to bowl of granulated sugar; tun each round so that both sides are coated with sugar. Place on un greased baking sheet. Prick rounds with fork about four times.
Bake 7-9 minutes or just until set, but not brown. Cool. Put cookies together in pairs with Creamy Filling.
Creamy Filling:
Cream 1/4 cup soft butter or margarine, 3/4 cup confectioners' sugar and 1 teaspoon vanilla until smooth and fluffy. Tint with few drops food color. Add few drops water if necessary for proper consistency.
(I make mine with cream cheese frosting instead, but both are great)

I want to try this recipe out! If your mom likes these as much as Smart cookie, then HELLO?!
